Salmon Filet With Sweet Potatoes & Asparagus


Salmon, I just love salmon! Really I do!! So I am always looking for a great new recipe to try. Plus, if something is easy and quick to make – even better!  I found this recipe and  I made it for dinner tonight and it was absolutely yummy! If you love salmon as much as I do you will not be disappointed.


 Ingredients: (Makes 1 serving)

  • 4 oz Salmon Filet

  • 1/2 Sweet Potato

  • 10 Spears of Asparagus

  • 2 tsps Dijon Mustard

  • 1 Lemon

  • Ground Pepper




  1. Preheat oven to 400 degrees.

  2. Line a baking sheet with foil and prepare with cooking spray.

  3. Squeeze half of a lemon over the raw salmon filet and let it marinate while you prepare the rest of the ingredients.

  4. Wash & trim asparagus spears

  5. Slice the sweet potato into cubes.

  6. Place the salmon filet in the middle of baking sheet and place the vegetables around the edges. Grind ground black pepper on the salmon and vegetables.

  7. Spread 1 tsp of Dijon mustard on top of the salmon filet

  8. Bake for 15 minutes, flipping the sweet potatoes and asparagus half way through cooking.

Lemon Dijon Finishing Sauce:
While salmon and vegetables are baking, combine the remaining 1 tsp of Dijon mustard and the juice from the other half of the lemon with black pepper.

After baking for 15 minutes, broil for 2 minutes to brown the salmon
Prepare your plate with the salmon, sweet potato cubes, and asparagus, then drizzle the Lemon Dijon Finishing sauce over top.
