Ingredients

Instructions
  1. Pre-heat oven to 350 degrees
  2. Cut the eggplants in half lengthwise and scoop out the flesh, leaving the skins intact.
  3. Chop the flesh into small pieces
  4. Heat the oil in a skillet and stir in the shallot and garlic. Salute for 2 minutes then add the chopped eggplant.
  5. Cook 5 additional minutes then remove from heat and stir in the bell peppers, tomato, parsley and basil.
  6. Season with salt and pepper then spoon the mixture into the eggplant skins.
  7. Top with mozzarella cheese and place the eggplant halves in a baking tray lined with parchment paper.
  8. Bake in the pre-heated oven at 350 degrees for 20-30 minutes
  9. Serve eggplants warm or chilled
